e believe that great coffee starts with great beans. Our distributors provide us with the best green coffees hand selected from around the world. Each crop is carefully processed, meticulously sorted and bagged and shipped to climate controlled warehouses around the country. Careful attention goes into choosing each shipment through taste testing called cupping. During this process samples from each shipment are carefully roasted and tasted to determine character and quality of the beans.

Once the green beans selected have made the journey to our roasting facility, they are carefully stored in their original burlap bags and kept away from moisture and sunlight. Careful attention is given to the temperature and humidity at the time of each roast. As the temperature and humidity change, we make small but critical changes to each roast, as may be required by different coffee origins. All coffee is not the same and must be given individual attention. Roasting great coffee requires careful attention to detail.

Once the coffee is roasted, the beans are quickly cooled by air being blown over the batch while being stirred, until the beans are cool to the touch. This is an important step because smoke and gasses emitted when the coffee beans are freshly roasted can leave an unpleasant taste. The coffee must then be allowed to emit carbon dioxide, or breathe, for the next two to three days. This important process is called degassing. Degassing can occur after the coffee beans have been bagged as long as the bag has a "degassing valve" or is not airtight.

Finally the coffee is shipped to our customers. It is on the third day after roasting that the coffee reaches its peak of flavor. It is our desire to deliver our coffee to our customers as close to this time as possible. Fresh coffee, properly roasted, is an experience unlike any other in the world, and is some of what we hope to bring to many who have not yet experienced it.
